We press a lot of tortillas and eat a lot of tacos. We grill and eat a lot of sausages. We like beer and wine. A lot. Welcome to Taco Brat. Tacos and sausages don’t normally play together but, at Taco Brat, they share the love of the kitchen and are brought together by a healthy beer selection that includes honorable mentions from both Mexico and Germany, as well as many local craft favorites. Sitting alongside the beers are exceptional, affordable boutique wines chosen to pair with these traditionally non-wine friendly menus.

I was raised on great, homemade food. We were all adventurous cooks. We made beer bread and pizza dough, tempura fried “anything,” and dry cured pork on nails in the oven to dip in spicy mustard and sesame seeds. I was raised a chef and didn’t even know it.

I learned classic technique at Scottsdale Culinary Institute and studied baking and pastry at Le Cordon Bleu in Paris, France. I’ve worked at some exciting restaurants in Orange County and Los Angeles in the last 25 years, but my heart is in Costa Mesa.

Opening Taco Brat in my own neighborhood – just four blocks from my first apartment out of high school and a beach cruiser ride from my home – is my most gratifying venture. With my passion for hand cranked sausages and handmade tacos, I’m thrilled to bring Taco Brat to this exciting, eclectic and vibrant community.
